Chicken Leg and Thigh Nutritional Balancing Recipe

I should start weighing my meals, some of these are impressive when it comes to volume.  This nutritional balancing dish features the delicious chicken leg quarter (both leg and thigh), along with a number of vegetables.  All were pressure cooked together between 1-2 minutes in the Instant Pot.

Ingredients:

-1 chicken quarter

-brussel sprouts

-cauliflower florets (with some stems/ leaves)

-1 yellow onion

-2 carrots

-garlic cloves

-slivers of fresh ginger

The simplicity of this is awesome, and keeps things easier on digestion.  No need for a half dozen spices!
